Beef Flat-Iron Steaks
Named for its unique shape, this versatile steak has been skilfully prepared from the shoulder and promises unexpected tenderness, flavor and natural marbling.
Bloom the meat
Remove the Silver Fern Farms Beef Flat-Iron Steaks from packaging and set aside to bloom before cooking.
Make the spice rub
Oil and season the steaks. In a small bowl mix the garlic, coriander, cumin, onion powder and chipotle powder together. Use half to rub onto the Beef Flat-Iron Steaks. Mix the remainder spice mix into the mayonnaise and refrigerate until needed.
Cook the meat
Heat a skillet, frying pan or BBQ plate pan on moderate to high heat. Grill the beef steaks for 3 minutes on each side (for medium-rare)
Give it a rest
Remove the steaks from the pan. Rest for 5 minutes, covered with foil. Slice across the grain for maximum tenderness.
Grill the bread
Heat a skillet, frying pan or grill plate pan on moderate to high heat. Gently rub bread slices with 1 tablespoon of olive oil, lay slices on the grill and top with Swiss cheese. Once the bread is browned and the cheese has melted, remove from heat.
Serve it up:
Top two of the toasted cheese melts with watercress, red onion, bell pepper, spicy mayonnaise and sliced steaks. Top with the remaining toasted bread cheese side down. Add dill pickles.
